OUR NEWEST FLAVOUR: WHAT IS GOLDEN BLOND CHOCOLATE AND HOW IS IT MADE?

Golden Blond is this year's most eagerly anticipated flavour, and we can't wait for you to try the newest in our range. A twist on chocolate as you know it, our Golden Blond Mochi combines caramelised white chocolate into a silky smooth golden gelato, studded with white chocolate pieces.

WHEN WAS GOLDEN BLOND CHOCOLATE INVENTED?

Golden Blond is a relatively new concept, and up until recently had remained a secret trick amongst pastry chefs and artisan chocolatiers looking to elevate their desserts and add a dimension of flavour.

Discovered by pastry chef Frédéric Bau in 2006, Golden Blond was a happy accident formed when some white chocolate had been left in the bain-marie for too long. When he returned, he found that the white chocolate had turned a golden hue and there was a distinct biscuity smell. 

The white chocolate had undergone something called a Maillard reaction, similar to caramelisation. The result? A new flavour of chocolate with a distinct flavour profile, which inspired foodies to replicate and perfect the recipe. 

WHAT DOES GOLDEN BLOND TASTE LIKE?

Described as the “fourth colour of chocolate”, Golden Blond is more indulgent than white chocolate, more mellow than dark chocolate and creamier than milk chocolate.

It has a lightly caramelised taste, whilst also being intertwined with a faint biscuit-y taste that helps to balance the sweetness. It’s taken some time to perfect, and the taste shows that some things really are worth waiting for.
